These ingredients can still be rapidly digested and produce substantial blood-glucose responses.
A cookie doesn't become a health food simply because it says “gluten-free” on the package.

But what replaces wheat matters.
A diet containing vegetables, nuts, seeds, protein-rich foods, and other minimally processed foods can be nutritionally complete.
Again, food quality matters.
Critics argue that some of the benefits people experience after eliminating wheat may result from reducing refined carbohydrates and highly processed foods, rather than from avoiding wheat itself.
Another concern is that eliminating grains can reduce common sources of fiber, B vitamins, iron, and magnesium. However, these nutrients can readily be obtained from a well-formulated diet containing a variety of nutrient-dense foods.
Many people who have followed Davis’s approach report substantial weight loss, improved energy, better blood-sugar control, and other health improvements. Such personal experiences cannot prove that eliminating wheat was responsible, but they are one reason his approach has attracted considerable interest.
This does not mean that everyone needs to eliminate wheat. For someone who is curious, a one-month trial of avoiding wheat—while paying attention to hunger, energy, digestion, weight, and blood glucose when relevant—may provide useful information about how that individual responds.
Wheat Belly made me reconsider foods I had assumed were automatically healthy. Bread and cereal had occupied a very different place in my thinking about nutrition.
Davis encouraged me to pay more attention to carbohydrates, blood glucose, insulin, and the large role refined grains play in the modern diet. The book helped lead me toward the low-carb way of eating I have followed for more than a decade.
